Kale Salad with Red Cabbage & Pumpkin Seeds

A salad is always an easy go-to lunch or dinner for me. It is incredibly versatile. It can warm or cold, sweet or savoury, minimal ingredients or really intricate. With so many optional add-ins, I don’t think I’ll ever get bored.


This Kale Salad is very easy and a great way to get some colour into your meals.

Kale Salad with Red Cabbage & Pumpkin Seeds

  • Difficulty: easy
  • Print



  • 1 bunch of fresh Kale (~2 cups)
  • 1/4 cup of Red Cabbage (or more, depending on preference)
  • 1 Tbsp of pumpkin seeds


  • 1 tsp Cold Pressed Oil of choice (Olive or Flax are my favourites)
  • 1 tsp Balsamic Vinegar
  • 1/2 tsp Maple Syrup
  • Optional* 1 tsp Apple Cider Vinegar


  1. Roughly chop Kale and Red Cabbage
  2. Massage the Kale in a mixing bowl to give it a more tender texture
  3. Add chopped cabbage and pumpkin seeds
  4. Pour dressing
  5. Mix well
  6. Add all ingredients to your serving bowl
  7. Eat and enjoy!
